
vegan Spaetzle
Ingredients
- 400 g spaetzle flour* or: spelt flour*
- 60 g semolina* or: flour
- 75 g potato starch* or: corn flour*
- 500 ml soy milk*
- 1 tbsp vegetable oil e.g. canola oil or sunflower oil
- 2 tsp salt*
- 1 pinch of turmeric*
Instructions
- Mix all dry ingredients in a large bowl*. Then add the oil the soy milk and mix slowly.
- Mix the dough with a stirring spoon* until the dough bubbles.
- The dough should run viscously from the spoon* without traveling. If the dough is too thick, simply stir in some more soy milk. The more liquid the dough is at the end, the longer the spaetzle will be.
- Now boil plenty of salted water in a large pot and add the spaetzle to the water in stages using the spaetzle grater*.
- As soon as the spaetzle float to the surface of the water, they are finished. Skim the spaetzle with the straining spoon* and briefly rinse them in cold water (so they don't stick together and keep their shape). Then keep warm in a bowl until all the other spaetzle are done.
