
spaetzle vegetable stir-fry
Ingredients
- 300 g vegan (homemade) spaetzle*
- 1 clove garlic
- 1 red bell pepper
- 2 carrots
- 100 g fresh mushrooms
- 1 small zucchini 200 g
- ½ broccoli
- 200 ml oat cream*
- 1 tbsp paprika powder*
- fresh chives & fresh parsley to taste
- salt & pepper to taste
- 1 tbsp vegetable oil z.B. canola oil or sunflower oil
Instructions
- Dice the bell bell pepper, zucchini and carrots. Slice the mushrooms and press the garlic. Wash broccoli thoroughly and cut the florets into slices.
- Briefly sauté broccoli and carrots in oil until al dente. Add bell bell pepper, zucchini and mushrooms and fry.
- Just before the vegetables are cooked, add the garlic to the pan* and sauté. Then add the spaetzle and fry everything together.
- Deglaze with the oat cream* and simmer briefly until the oat cream* is absorbed.
- Add salt, pepper, herbs and spices and season to taste. Stir everything well again and serve.
