
Quinoa Patties

Ingredients
- 150 g quinoa
- 400 ml water
- 2 tsp vegetable stock powder
- 2 potatoes
- 1 large carrot
- 3 tbsp potato starch*
- 3 tbsp breadcrumps*
- ½ tsp garlic powder*
- 2 tsp paprika powder*
- salt and pepper to taste
- fresh chives & fresh parsley chopped, to taste
- 1 tbsp vegetable oil e.g. canola oil or sunflowe oil
Instructions
- Wash out the quinoa with warm water. In a saucepan, heat the water together with the vegetable stock powder. Add the washed quinoa to the broth and simmer for 10-15 minutes over medium heat with the lid open, until all the water has boiled down. Then let it cool down.
- While the quinoa is cooling down, finely grate the potatoes and carrot into a bowl*. Add the potato flour, breadcrumbs and spices and mix well.
- Add the quinoa and mix everything into a homogeneous mass. If it is still too liquid, just add some more breadcrumbs until you can form the patties well.
- Now add the oil to a non-stick frying pan* and heat over medium heat. Then fry the patties for 3-4 minutes on both sides until golden brown and crispy.
