Quinoa Patties

These crispy quinoa patties are perfect as burger patties, barbecue ingredient or salad garnish. They are quick to prepare, vegan and lactose-free.

Ingredients
 

  • 150 g quinoa
  • 400 ml water
  • 2 tsp vegetable stock powder
  • 2 potatoes
  • 1 large carrot
  • 3 tbsp potato starch*
  • 3 tbsp breadcrumps*
  • ½ tsp garlic powder*
  • 2 tsp paprika powder*
  • salt and pepper to taste
  • fresh chives & fresh parsley chopped, to taste
  • 1 tbsp vegetable oil e.g. canola oil or sunflowe oil

Instructions
 

  • Wash out the quinoa with warm water. In a saucepan, heat the water together with the vegetable stock powder. Add the washed quinoa to the broth and simmer for 10-15 minutes over medium heat with the lid open, until all the water has boiled down. Then let it cool down.
  • While the quinoa is cooling down, finely grate the potatoes and carrot into a bowl*. Add the potato flour, breadcrumbs and spices and mix well.
  • Add the quinoa and mix everything into a homogeneous mass. If it is still too liquid, just add some more breadcrumbs until you can form the patties well.
  • Now add the oil to a non-stick frying pan* and heat over medium heat. Then fry the patties for 3-4 minutes on both sides until golden brown and crispy.
