Hummus

This creamy and aromatic chickpea dip is totally easy and quick to prepare. The vegan, dairy-free and gluten-free spread requires only a few ingredients and is a great side dish for the next (barbecue) feast.

Ingredients
 

  • 1 can chickpeas* 265g drained net weight
  • 6 tbsp chickpea water
  • 2 garlic cloves
  • 1 lemon
  • 3 tbsp olive oil
  • 2-3 tbsp tahin
  • 1 tsp cumin
  • salt and pepper to taste
  • fresh parsley to garnish

Instructions
 

  • Drain the chickpeas in a colander*, collecting the water. Then place the chickpeas in the multi-cutter*. Set aside a few chickpeas for garnish.
  • Squeeze the lemon with the citrus press* and press the garlic through the garlic press*. Add lemon juice, garlic, tahini and spices to the chickpeas.
  • Grind everything in the multi-cutter*, add the oil and chickpea water and blend until the mixture becomes creamy.
  • If the mixture is too firm, simply add a little more chickpea water until the hummus has the desired consistency.
  • Transfer everything into a bowl* and leave to infuse for 1-2 hours. Then garnish with the chickpeas and parsley and serve.

Notes

The hummus fits super as a dip to Arabic pita bread, in a wrap, to a mixed bowl or even on bread and as a sandwich.
The dip is super quick to prepare and versatile.
