This delicious scrambled tofu tastes great as a snack in between meals or as a breakfast substitute for scrambled eggs. The dish is varied and there are countless variations of this recipe, because you can take different vegetables depending on your taste. It is super easy and very quick to prepare. Of course, it is vegan, diary-free and gluten-free.

Ingredients
 

  • 200 g tofu* firm
  • 2 tomatoes
  • 2 small spring onions
  • 2 tbsp soy sauce*
  • 1 tsp turmeric*
  • 1 tsp paprika powder*
  • salt & pepper to taste
  • ½ bunch of fresh chives
  • 3 tbsp vegetable oil sunflower oil or canola oil

Instructions
 

  • Mash tofu* with a fork. Dice tomatoes and cut spring onions into small rings.
  • Fry the tofu with oil in a pan* until golden brown. If the tofu* absorbs all the oil, just add another dash of oil.
  • Deglaze with soy sauce* and season with turmeric, paprika powder, salt and bell pepper.
  • Briefly sauté the tomatoes and spring onions. Finally, add the fresh chives and serve immediately. Enjoy your meal!

Notes

Whether for breakfast, as a snack in between or as a side dish: The scrambled tofu tastes always and best with fresh bread.
If it serves as a scrambled egg substitute, you can simply refine it with a pinch of Kala Namak*.
